Quick Chicken Noodle Soup

Ingredients
- 1 tablespoon olive oil
- 1 yellow onion (diced)
- 2 carrots (sliced into 1/4-inch coins)
- 2 celery (stalks, sliced)
- 3 cloves garlic (minced)
- 6 cup chicken broth
- 2 cup cooked shredded chicken
- 2 cup egg noodles (dry)
- 2 tablespoon fresh parsley (chopped)
- salt (to taste)
- black pepper (to taste)
Instructions

Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook 5-6 minutes until softened.

Add the garlic and cook 30 seconds more.

Pour in the chicken broth and bring to a simmer.

Add the egg noodles and cook 6-8 minutes, until tender.

Stir in the shredded chicken to warm through, 2-3 minutes.
