Avocado Toast with Fried Egg

Crisp toast, creamy avocado, and a runny yolk.

Ingredients

  • 1 sourdough bread (thick slice)
  • 1/2 avocado (ripe)
  • 1 egg (large)
  • 1/2 teaspoon lemon juice
  • 1 teaspoon olive oil
  • salt (to taste)
  • black pepper (to taste)
  • red pepper flakes (to taste)

Instructions

    Toast the bread until deeply golden and crisp.

    Scoop the avocado into a small bowl. Add the lemon juice and a pinch of salt, then mash with a fork to a chunky consistency.

    Heat the olive oil in a small nonstick skillet over medium heat. Crack in the egg and cook until the white is set but the yolk is still runny, 2-3 minutes.

    Spread the avocado over the toast. Slide the fried egg on top.
