Slow-cooked eggs with a creamy, custardy texture.
Ingredients
- 4 egg (large)
- 1 tablespoon butter
- 1 tablespoon whole milk
- salt (to taste)
- black pepper (to taste)

Crack the eggs into a bowl and whisk with the milk and a pinch of salt until the yolks and whites are fully blended.

Melt the butter in a nonstick skillet over low heat. Pour in the eggs.

Using a rubber spatula, gently push the eggs from the edges toward the center every 20-30 seconds. Keep the heat low — slow is the whole trick.

When the eggs are mostly set but still glossy and slightly wet, remove from the heat (they'll finish cooking from residual warmth).

Season with salt and pepper and serve immediately.
