Hummus with Crudités

Creamy chickpea dip with sliced veggies for dipping.
Ingredients
- 15 ounce chickpeas (canned, drained and rinsed)
- 1/4 cup tahini
- 3 tablespoon lemon juice
- 1 cloves garlic
- 3 tablespoon olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon salt
- 2 tablespoon ice water (or more as needed)
- 3 carrots (cut into sticks)
- 3 celery (stalks, cut into sticks)
- 1 bell pepper (sliced)
- 1 cucumber (sliced)

In a food processor, blend the tahini, lemon juice, and garlic for 30 seconds until creamy.

Add the chickpeas, olive oil, cumin, and salt. Process for 1-2 minutes, scraping down the sides, until smooth.

With the motor running, drizzle in the ice water until the hummus is light and fluffy. Add more water a teaspoon at a time if needed.

Taste and adjust salt or lemon.

Spread on a plate, drizzle with a little extra olive oil, and serve with the cut vegetables for dipping.
