Black Bean Chili

Hearty, smoky chili that gets better as it sits.
Ingredients
- 2 tablespoon olive oil
- 1 yellow onion (large, diced)
- 1 bell pepper (diced)
- 4 cloves garlic (minced)
- 1 pound ground beef (or omit for vegetarian)
- 2 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 1/2 teaspoon salt
- 30 ounce black beans (canned, drained and rinsed)
- 28 ounce diced tomatoes (canned)
- 1 cup chicken broth
- 1 cup shredded cheese (for serving)
- 1/2 cup sour cream (for serving)

Heat the olive oil in a large pot over medium heat. Add the onion and bell pepper; cook 5-6 minutes until softened.

Add the garlic and cook 30 seconds.

Add the ground beef, breaking it up with a spoon. Cook 6-8 minutes until browned. (Skip this step for vegetarian; the chili still works.)

Stir in the chili powder, cumin, smoked paprika, and salt. Cook 1 minute until fragrant.

Pour in the black beans, diced tomatoes (with their juice), and chicken broth. Bring to a simmer, then reduce the heat to low and cook uncovered for 25-30 minutes, stirring occasionally, until thickened.

Taste and adjust salt. Serve in bowls with cheese and sour cream.
