Weeknight Ground Beef Tacos

Seasoned beef, soft tortillas, and all your favorite toppings.

Ingredients

  • 1 pound ground beef (80/20)
  • 1 yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 2 tablespoon tomato paste
  • 1/2 cup water
  • 8 corn tortillas (small, warmed)
  • 1 cup shredded cheddar cheese
  • 2 cup lettuce (shredded)
  • 1 tomato (diced)
  • 1/2 cup salsa (for serving)
  • 1/2 cup sour cream (for serving)

Instructions

    Heat a large skillet over medium-high heat. Add the ground beef and onion, breaking the meat up with a spoon. Cook 6-8 minutes until the beef is browned and the onion is soft.

    Drain off excess fat if there's more than a thin film.

    Stir in the garlic, chili powder, cumin, smoked paprika, and salt. Cook 1 minute until fragrant.

    Add the tomato paste and water. Simmer 3-4 minutes until the sauce thickens and coats the meat.

    Serve in warm tortillas with cheese, lettuce, tomato, salsa, and sour cream.
