Sheet-Pan Salmon with Vegetables

Salmon and broccoli on one pan in 25 minutes.
Ingredients
- 4 salmon fillets (6-ounce, skin on or off)
- 1 pound broccoli (cut into florets)
- 2 bell pepper (sliced)
- 3 tablespoon olive oil
- 3 cloves garlic (minced)
- 1 lemon (half juiced, half sliced)
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Heat the oven to 425°F. Line a rimmed sheet pan with parchment.

Toss the broccoli and bell pepper on the sheet pan with 2 tablespoons of the olive oil, half the garlic, half the salt, and half the pepper. Spread in an even layer and roast 8 minutes.

Push the vegetables to the sides. Place the salmon fillets in the middle. Brush with the remaining olive oil and lemon juice, then sprinkle with the remaining garlic, salt, and pepper. Lay the lemon slices on top.

Return to the oven and roast 10-12 minutes more, until the salmon flakes easily with a fork and the vegetables are tender.

Serve straight from the pan.
