Classic Buttermilk Pancakes

Fluffy weekend pancakes from pantry staples.

Ingredients

  • 1 1/2 cup all-purpose flour
  • 3 1/2 teaspoon baking powder
  • 1 tablespoon granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cup buttermilk
  • 1 egg (large)
  • 3 tablespoon butter (melted)
  • 1 teaspoon vanilla extract

Instructions

    Whisk the flour, baking powder, sugar, and salt together in a large bowl.

    In a separate bowl, whisk the buttermilk, egg, melted butter, and vanilla until smooth.

    Pour the wet ingredients into the dry and stir until just combined — a few lumps are fine. Let the batter rest for 5 minutes.

    Heat a nonstick skillet or griddle over medium heat. Ladle about 1/4 cup of batter per pancake. Cook until bubbles form across the surface and the edges look set, 2-3 minutes, then flip and cook another 1-2 minutes.
